Ingredients:
- 20 oz chicken (about 1.5 lbs)
- 1/4 cup fresh dill weed
- 1/4 cup fresh cilantro
- 1/4 cup fresh tarragon
- 1/4 cup olive oil and 1 tsp
- 1 tbsp Red Wine Vinegar
- 1 garlic clove
- 4 small Scallions
- salt
- pepper
- 1/4 cup walnuts chopped (optional)
Directions:
- Cut the chicken into chunks and place into a large gallon size Ziploc bag and set aside
- Add all the other ingredients, other than the walnuts into a blender
- Pulse until a liquid marinade forms (may need to add 1 tbsp water if everything is too chunky)
- Pour the marinade into the bag and let chicken marinate for 3 or more hours
- Heat a tsp olive oil in a pan and add walnuts, cook walnuts until browned and fragrant
- Add chicken into pan and sprinkle with salt and pepper
- Cook the chicken for 7-10 minutes, only mixing occasionally
- Serve chicken with a side of roasted veggies and enjoy!
