Ingredients:
- 2 cups oats (I used Trader Joes Hot Multigrain Cereal)
- 1/4 cup coconut flour
- 2 tbsp flax
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 2 tsp baking powder
- 1 tbsp honey
- 1 cup Plain nonfat greek yogurt
- 2 eggs
- 3/4 cup unsweetened almond milk (may need less or more)
- 8 medium strawberries
Directions:
- In a food processor form oat flour by processing/ chopping the oats until it is very fine.
- In a bowl mix all the dry ingredients together.
- In a small bowl mix the honey, yogurt, eggs, and strawberries together. Add these wet ingredients into the dry mix, slowly add the almond milk into the mix until the batter is your desired consistency. I leave mine pretty thick.
- Use about 2 tbsp of batter per pancake.
