I made these morning, I wanted some pancakes, but I didn't have too much time to make some since I have to study for midterms before I go to school. I saw a pancake recipe and altered it a little bit to make it lower in calories. These are drop scones because they are a tiny bit more dense than pancakes and thinner. But, they are still yummy. I like how they are low cal and you can too them with whatever you want. I went with some homemade pecan butter by throwing some pecans in a chopper and processing them until they release enough oil that it sticks together.
Ingredients:
- 1/2 cup pumpkin
- 1/2 cup oats
- 1/2 cup Egg beaters
- Vanilla
- Nutmeg
- Pumpkin spice
- Allspice
Directions:
- Make oat flour by pouring the oats into a chopper and processing until a fine powder is made, then pour it into a bowl.
- Add the pumpkin and eggs and mix until combined. Add in the vanilla and spices, I just eyeball it.
- Then heat a pan and spray with Pam and drop 4 globs of the batter onto the pan and then spread using the back of a spoon.
- Flip once when the edges start to cook and get dry on one side. Serve and enjoy
