Ingredients:
- 8 pitted dates
- 1/2 cup unsweetened shredded Coconut
- Bananas and Berries
Directions:
- Pit all the dates and place in a chopper, pulse until it is fine peaces and pliable. Then add the unsweetened coconut.
- Take a small plastic container (Like a Ziploc or Tupperware) and place wax paper in it. Use half of the chopped date/coconut mix.
- Slice any fruit you want and layer it inside. Then take the date mix and place over the top of the fruit until everything is covered.
- Place the cover on the container and refrigerate for more than 4 hours.
- When ready to serve flip the cake out onto a plate and cut.
* To reduce calories you can use 4 dates and a quarter/ half a banana in the chopper.
